Asian Chicken Salad

INGREDIENTS

  • 1 pound of ground chicken
  • 2 tablespoon vegetable oil
  • 2 shallots, thinly sliced
  • 2 garlic cloves, minced
  • 4 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 4 teaspoons Sriracha chili sauce
  • ¼ cup fresh cilantro
  • 1 teaspoon ginger
  • 2 carrots diced
  • 2 red bell peppers diced
  • 5 lettuce leaves

DIRECTIONS

  1. In a large skillet, heat the oil and cook the garlic and shallots for 2 minutes.
  2. Add the chicken over medium heat until no longer pink, 8-10 minutes, breaking it into crumbles.
  3. Add all the other ingredients. Cook and stir until drained.
  4. Add cilantro.
  5. Serve at room temperature in bed of lettuce.
