Gazpacho is a cold, refreshing, tomato based soup. This is a combination of many recipes we have tried throughout the years. It makes a lot and is quite versatile. Enjoy it on a warm evening with a crisp white wine, such as Dry Riesling.
Ingredients
- 1 cucumber, cut into chunks
- 4 cups tomato juice (such as V8)
- 1 green bell pepper, seeded and cut into chunks
- 1 cup beef or vegetable broth
- 1 stalk celery, without leaves, cut into chunks
- 1 carrot, peeled and cut into chunks
- 1 onion, cut into chunks
- 2 tablespoons olive oil
- 1/3 cup red wine vinegar
- 1/4 teaspoon hot sauce
- 1.5 teaspoons salt
- 1/8 teaspoon pepper
- 3 cloves raw garlic
- 3 teaspoons lemon juice
Directions
Place all in a food processor and process until smooth. Chill until ready to serve. It’s best to make this the day before service, as the flavors meld.
**We like to put a few homemade croutons in the bottom of the bowl and ladle in the soup. To finish we sprinkle on a little Parmesan cheese.**
